Alexandre Clochet-Rousselet, Head Chef
Alexandre Clochet-Rousselet, our Head Chef, joined the Hôtel Golf Château de Chailly in June 2022. He comes from a background where he has only worked in starred restaurants such as Le Pressoir d'Argent (Gordon Ramsay, Bordeaux) , La Table de Pavie (Saint Émilion), Relais Bernard Loiseau (Saulieu).
Passion for the land above all!
Alexandre is from Autun in Burgundy and returned to his roots after working for several years near Bordeaux. He makes it a point of honor to highlight local products from Bourgogne Franche-Comté, with a greater interest in those from Morvan, where he grew up. Our Chef joins forces with local producers to offer products in short circuits and above all seasonal!
On the plate, river fish have a place of choice, at the heart of gourmet dishes where taste is placed before aesthetics. A plate must be good before being beautiful.
